Pineapple Chow

Pineapple chow is a sweet, salty, and spicy Trinidadian snack made with garlic, pepper, and Kennedys Chadon Beni Sauce.

The sauce is the secret ingredient that gives the dish its unique flavor. Pineapple chow is easy to make and can be served as a side dish or snack. It is refreshing and delicious and can be enjoyed by people of all ages.

Ingredients

  • 2 cups fresh pineapple
  • 3 tbsp Kennedys Chadon Beni Sauce original / Spicy*
  • 1 pepper (pimento or ½ scotch bonnet)
  • 1 tsp salt
  • 1 clove of garlic (optional)
  • 1 tsp lime juice (optional)

Method

  1. Peel pineapple. Cut into bite-sized chunks.
  2. Wash and peel garlic.
  3. Wash and cut the pepper in half. Remove the seeds and white pith.
  4. Grind or blend the garlic and pepper.
  5. Add the blended ingredients and salt to the pineapple.
  6. Add lime juice and Kennedys Chadon Beni Sauce
  7. Toss to mix.
  8. Taste test and adjust salt and pepper levels.
  9. Cover and refrigerate for 30 minutes.
  10. Serve cold.
